Red Rice using Quinoa
2 Cups Organic Quinoa
4 Cups Water
1 pkg Mama Sita's Achuete (Annatto Powder)
2 tbl olive oil,
Canadian bacon
salt, blk pepper and garlic power to taste.
Using a small skillet, heat the olive oil and add Canadian bacon pieces to the pan. When the oil is hot, add the packet of Mama Sita's Achuete powder to dissolve. Remove the skillet from the stove. Using a rice cooker, add Quinoa, water and red oil mixture and stir at least twice so that the Quinoa is constantly mixed with the red oil mixture. Once the rice cooker light status changes from cook to warm, unplug rice pot. My rice cooker does not have an On and Off feature, just Cook and Warm. Everyone in my family loves Quinoa and it is a more healthier alternative to white rice. Try it out and let me know what you think.
Quinoa is a nutritious whole-grain substitute for rice and is just as simple to prepare. It is gluten-free, has a low glycemic index and provides all the eight essential amino acids, creating a complete protein.
